Fermentations, Psychrotolerant Fungi and their Potential Biotechnological Applications: Potential biotechnological or commercial applications of most microorganisms require the process of fermentation. Fermentation is a process with the goals of obtaining products from the mass culture of microorganisms, and this also includes the mass culture of fungi. The mass culture of fungi is important as fungi are also producers of various commodities that are high in industrial values: enzymes, such as cellulases and lipases; fungi biomass, for instance Brewer’s yeast; metabolites of fungi, such as antibiotics, statins and vitamins; recombinant products like insulin, interferon and human serum albumin; and transformation processes that yields metabolites that are structurally related.
